Everything done against your own interest can be a sacrifice, from the little selfless deeds that often go unnoticed, to the greatest ones, including the price of one's own life. They are usually done for the greater good, but who can judge its greatness? So a great sacrifice can turn meaningless at the end, or a small deed of kindness can have unforseen consequences. One can't know that when deciding to sacrifice something, but has to decide with free will - like Aragorn decided to draw Sauron's attention to himself in a hopeless fight, not knowing if it will be enough to help Frodo pass to Orodruin unnoticed.
Another, darker meaning of sacrifice, is a ritual offering to a higher being, like the human sacrifices on Númenor after Sauron became its High Priest. These are most often not done from free will on the victim's part, and the greater good is also questionable. The question is usually "for whom?", and the answer is on the side of evil. They also make a good material for a story though, as someone can strive to stop such a sacrifice, maybe sacrificing something selflessly in turn.
